Dive Brief:
- Corbion Purac has received a European patent for a coating technology used to produce acid powders that don't have a fat coating. The company has already used the new technology to create a range of malic acid powders, such as PURAC Powder MA.
- Fat-coated acids can create taste issues, such as a rancid off-taste or a delayed release of the sour taste; trigger problems with water absorption; and cause acid migration. The new coating technology provides more stable acid migration and moisture absorption from the environment. The result is that candy stays dry for its shelf life and then dissolves much faster in the mouth, providing an immediate burst of acidity.
- The company plans to launch more products based on the technology.
Dive Insight:
The products using the new technology are currently available only to the European confectionery market. If the products become available in the U.S., they could offer competition to other products on the market.
