Consumer demand has evolved beyond traditional lemon and lime to more exotic varietal options that rely on origin, provenance, or variety of plant species to add a premium element to products. While some new food and beverage products have included interesting varietal flavor profiles like Calamansi Lime, Rangpur Lime, Sicilian Lemon, Eureka Pink Lemon or Meyer Lemon, it is important to select a natural varietal flavor WONF so that the fruit may be featured on the front of the product label. To feature the Calamansi Lime image on the package, the actual named fruit must be part of the flavor, these flavors are known as WONF (with other natural flavors).
These natural or organic varietal flavor WONF flavors require unique approaches by procurement specialists to source the raw materials from the named fruit and in some cases even partnerships with growers to ship products to us to produce the extracts and essences necessary for natural flavor creation. For example, when Flavor Producers pursued the creation of flavor WONFs for Calamansi lime, Oro Blanco grapefruit and Rangpur lime, the specific fruit varietal puree or juice that would be utilized to create an extract or essence for flavor creation was not commercially available. Not to be deterred, we partnered with regional farmers to establish fruit tree groves and over time, directly sourced the whole fruits to process and create our own varietal fruit purees. From those varietal fruit purees, a distilled essence was created allowing us to create WONF varietal flavors to share with you.
Beyond just lemon and lime varieties consumers are also putting an emphasis on the provenance or origin of the flavor, items like California Strawberry or Mediterranean Orange all must be sourced from fruit grown in the area they are claiming, adding another layer of complexity and traceability that must be actively managed by our expert sourcing and regulatory teams. The authenticity of adding a flavor WONF with provenance distinguishes the taste profile and adds a premium element.
