Following its regional expansion into Whole Foods, Struesli is unveiling the newest addition to its lineup of superfood granolas: Cashew & Vanilla, debuting Spring 2026.
Founded by chef, cookbook author and wellness innovator Adrienne Lufkin, Struesli is known for its chef-crafted blends that are as visually appealing as they are nutrient-dense. The new Struesli Cashew & Vanilla blend brings a warm, approachable profile to the brand’s growing portfolio, complementing its existing lineup of rich, savory, and satisfying recipes.
As demand for clean-label, plant-based foods continues to rise, Struesli’s latest launch aligns with key consumer trends. In 2025, U.S. organic sales reached $76.6 billion, reflecting a 6.8% year-over-year increase and outpacing growth in the conventional food market. Ingredients like cashews and vanilla are driving innovation across the snacking category, valued for their nutritional benefits, versatility, and alignment with consumer preferences for simple, recognizable ingredients.
Cashews are widely embraced for their healthy fats and plant-based protein, while vanilla continues to gain traction as a premium, naturally derived flavor that enhances both taste and texture especially in functional and dairy-free products. Struesli’s Cashew & Vanilla granola also delivers 4g of protein and 3g of fiber per serving, offering an easy way for consumers to add prebiotic fiber to their daily routine.
“Since creating our first Struesli Original flavor, a pure and bountiful mix of tiger nuts, pecans, walnuts, coconut flakes, hemp hearts, chia seeds, and sea salt, I’ve been eager to expand,” said Lufkin. “With this blend, I’ve developed a superfood-centric recipe featuring the crowd-pleasing flavors of warm vanilla and buttery cashew.”
Made with 100% organic ingredients, the Struesli Cashew & Vanilla granola is certified gluten-free, plant-based, grain-free, Kosher certified and contains no added sweeteners. The blend features cashews, real vanilla bean, sliced almonds, pumpkin seeds, flaked coconut, hemp hearts, chia seeds, golden flax, and Struesli’s signature ingredient: tiger nuts.
Despite their name, tiger nuts are not nuts but small root vegetables (tubers) naturally sweet in flavor. As the hero ingredient in every Struesli blend, they provide a satisfying crunch along with notable nutritional benefits, including:
- Prebiotic resistant starch to support gut health and digestion
- Fiber and healthy fats that help regulate blood sugar and support heart health
- Antioxidants such as vitamins E and C
- Essential minerals including potassium and magnesium
- Sustained energy to promote satiety
Struesli Cashew & Vanilla will launch on Struesli.com before expanding to Amazon and select retail locations. Current flavors, including Original, Cacao & Coffee, and Savory & Seed, are available at Erewhon, Whole Foods, Lazy Acres, Citarella, Westside Market, Union Market, Fairway, Gourmet Garage, Dumbo Market. And, will be launching in select Raley's in CA , DeCicco's & Sons, and Uncle Guiseppe's in June.
