- Wixon offers a line of Mag-nifique flavor modifiers that can limit aftertastes, enhance desirable tastes and enable companies "to develop new low sodium, low sugar, fortified, enhanced, and/or enriched food products and dietary supplements without any flavor compromises."
Dive Insight:
FONA International reported a 57% rise in the launch of new sour-flavored products from 2013 to December 2014, with 341 new sour-flavored products on the market from 2008 to December 2014. The leading sour-flavored category is sugar and gum confectionery.
"Emerging research has shown that consumers seek to intensify sour flavor experiences, or view sourness as a cue that there is no or less sugar in the product. Already popular in Greek yogurt, pickling and products with vinegar, sour will continue to be a top flavor trend. Sour-Lift can give foods and beverages that enhanced sourness without adding unpleasant acid or compromising on taste," according to Leda Strand, Wixon’s Vice President of Research & Development.
